Direct circuit Aubrac meat from Mrs Majorel's farm in Pierrefiche d'olt, Organic Larzac lamb from Mr Goujon's farm in l'Hospitalet du Larzac. In addition to working in direct circuit we work on the maturation of our meats, with pieces of beef matured at 3 weeks.
